The first beta of iOS 12 introduces a new Automatic Updates toggle under the Software Update menu. When toggled ON, your iPhone will automatically install firmware updates as they become available.
Currently, the feature defaults to OFF; however, if enabled, this could help Apple increase adoption of its latest software update.
It's likely that updates will be performed at night and when your iPhone is plugged into a charger.

At least it's got a toggle... hopefully the next tvOS beta profile for iPhone will disable the option entirely.
