The iPhone Dev Team have released a tethered jailbreak for the iPod Touch 2G named "redsn0w lite."
Unfortunately, this is a tethered jailbreak, meaning each time you turn your iPod Touch on, you must connect it to your computer, and do some steps over again. The Dev-Team is still trying to find out a way to have an untethered jailbreak.

If your stuck on a certain screen the firmware you restored it to was not matching the jailbreak update(ISPw). I was told that from a friend. That's why I haven't used this jailbreak. Need more feedback on people who have it jailbroken with no issue's. And haven't heard anyone doing the 2nd gen itouch with the 2.2 firmware. Please respond back about jailbreaking 2.2 2nd gen itouch!!!!!
