Upgrading an iPhone 3GS to iOS 5.1.1 today is difficult because Apple no longer signs that firmware version. To perform this upgrade, you must have previously saved SHSH blobs for iOS 5.1.1 for your specific device. If you have those blobs, you can use a tool like Redsn0w or iFaith to stitch them into a custom IPSW file. Once the custom firmware is created, put your device into Pwned DFU mode using Redsn0w. Then, open iTunes and perform a Shift-Restore on Windows or Option-Restore on Mac, selecting the custom iOS 5.1.1 firmware. If you do not have saved blobs, iTunes will only allow you to upgrade to the latest supported version for the 3GS, which is iOS 6.1.6.

To upgrade an iPhone 3GS from 4.3.3 to 5.1.1, follow these steps:

1. Save your SHSH Blobs.
2. Stitch the SHSH blobs with the firmware IPSW using Redsn0w.
3. Enter Pwned DFU mode with Redsn0w.
4. Restore with iTunes using the custom IPSW.
5. Jailbreak with Redsn0w if desired.
6. Perform a tethered boot if required for your specific jailbreak.
