I have an iPhone 5 and would like to update it to iOS 6.1.2 instead of the latest available version. Is it possible to choose a specific older firmware version during the upgrade process?

Apple generally only allows users to install iOS versions that are currently being digitally signed by their servers. When a new update is released, the signing window for the previous version usually closes within a week. If you are trying to upgrade an iPhone 5 to iOS 6.1.2 while iOS 6.1.3 or later is the current signed version, iTunes will typically block the installation and force the newer update. The only way to install an unsigned firmware is if you have previously saved SHSH blobs for that specific version and device, which allows for the use of third-party restoration tools. Without those saved digital signatures, you must install the most recent version Apple supports for your device.
