MultiExchange by Tom Zickel lets you add and sync to multiple exchange servers using the iPhone.
Now you can have Push Mail for multiple accounts, including multiple gmail ones. This program removes the 1 Exchange ActiveSync account limitation that apple puts on the devices. It does not have an icon or a setting feature. Simply try to add a new Exchange account and it should work.
Features ● Sync multiple exchange accounts at the same time. ● Supports syncing multiple gmail accounts as well. ● Push Mail, Contacts, Calender, Mail Sync.
Compatibility MultiExchange has been tested to work on all iPhones running firmware 3.0 till 3.1.2.
You can purchase MultiExchange for $.99 from the Cydia Store.

Also I believe there is a free app that can do the same, but just not directly through the email settings, it is called AddExchange iirc. Seems to work well for most people.
Or you can just do the hack for free and have the same results. I think the difference with this one maybe the fact that you can just keep adding exchange emails under the mail settings rather than having to hardcode the account in the plist everytime
