Ryan Petrich has released WiCarrer, a simple iPhone utility which replaces your carrier name with the name of the Wi-Fi network you're connected to.
If you tap the name of the Wi-Fi network it will display your local IP address.
Once you disconnect from your Wi-Fi network the status bar will display the name of your cellular network again.
You can download WiCarrier from the Big Boss Cydia Repository.
