Mac Mini $700 + MacCuff $60 + Decent 21" monitor $200 + Decent Mouse/keyboard bundle $30 = $990. Entry level iMac $1200, save $210. Not the best reason but I have seen from experience that apple monitors usually have problems and a whole lot of dead pixels, but not enough to be able to be replaced by warranty.
I got my Mac mini refurbished for $500 and already had a 19" LCD monitor, so I mounted my Mac mini to the back of it for obvious savings over an iMac. See my other post for DIY instructions.
