A dialog box specifies that by converting a note to Rich Text, devices such as the iPhone will not be able to edit it.
According to a tip received by TUAW, a dialog is produced when creating a new note and pressing Command + b in OSX. Rather then bolding the note content, the user is warned that converting a note to Rich Text will make it so the iPhone cannot edit it.
Since this dialog is displayed in OSX it seems as though Apple is intending to add syncing to the iPhone so notes will become editable from the portable device!
